Our leavened products are the result of recipes and craft traditions rooted in the past. Scarpato maintains the traditional flavours handed down for a hundred years with a touch of modernity following the current trends.

Our Panettone is born from three doughs and a slow leavening process. Every stage respects the timing of the sourdough starter to achieve a soft, fragrant, and naturally light crumb. Our sourdough has been stored and refreshed three times a day for over 100 years so that our leavened products can release distinctive flavours and aromas. Only a selected blend of grain flours with high protein content suits the long leavening. 

We follow every leavened product from dough preparation through to packaging. The result is never industrially identical: it is recognisably Scarpato.

Serve it at room temperature, without heating it: the cream stays soft and velvety and the dough releases all its aromas.

Pair it with a sweet wine or a passito. With coffee, chocolate, and tiramisu flavours, an espresso is also an excellent match.

Ingredients: WHEAT flour, tiramisu filling 19% (MASCARPONE 21.3% (fresh pasteurised CREAM, fresh pasteurised MILK, acidity regulator: lactic acid), glucose syrup, CREAM, semi-skimmed MILK, sugar, thickeners: pectin and sodium alginate, BUTTER, alcohol, RICOTTA (cow’s MILK whey, salt, acidity regulator: citric acid), EGG mixture, natural flavouring, preservative: potassium sorbate), fresh free-range EGGS, sugar, BUTTER, natural yeast (WHEAT flour, water), glucose syrup, fresh free-range EGG yolk, emulsifiers: mono- and diglycerides of fatty acids of vegetable origin, whole MILK, 100% Colombian Arabica coffee powder, cocoa butter, salt, skimmed MILK powder, natural flavourings. Sweetened cocoa powder sachet 30g. (fat-reduced cocoa 10-12% fat content (50%), icing sugar (sugar 47% and WHEAT starch 3%).
