Every stage respects the timing of the sourdough starter to achieve a soft, fragrant, and naturally light crumb. Our sourdough has been stored and refreshed three times a day for over 100 years so that our leavened products can release distinctive flavours and aromas. Only a selected blend of grain flours with high protein content suits the long leavening. \u003c\/p\u003e\n\u003cp\u003eWe follow every leavened product from dough preparation through to packaging.
