Our leavened products are the result of recipes and craft traditions rooted in the past. Scarpato maintains the traditional flavours handed down for a hundred years with a touch of modernity following the current trends.

Our Panettone is born from three doughs and a slow leavening process. Every stage respects the timing of the sourdough starter to achieve a soft, fragrant, and naturally light crumb. Our sourdough has been stored and refreshed three times a day for over 100 years so that our leavened products can release distinctive flavours and aromas. Only a selected blend of grain flours with high protein content suits the long leavening. 

We follow every leavened product from dough preparation through to packaging. The result is never industrially identical: it is recognisably Scarpato.

Serve it at room temperature, without heating it: the cream stays soft and velvety and the dough releases all its aromas.

Pair it with a sweet wine or a passito. With coffee, chocolate, and tiramisu flavours, an espresso is also an excellent match.
